Chicken Ingredients:
-2 lbs chick breast, boneless skinless
-3 Tbsp dijon mustard
-1 1/2 Tbsp garlic powder
-salt and pepper, to taste
Pasta Ingredients:
-8 oz pasta of choice, uncooked
Veggies Ingredients:
-1 large cucumber, seeds removed and medium dice
-1 green bell pepper, medium dice
-10 oz grape tomatoes, halved
-4 oz canned black olives, sliced and drained (optional)
-1/2 medium red onion, thinly sliced or small dice
-15 oz can garbanzo beans (chickpeas), drained
Dressing Ingredients:
-6 Tbsp olive oil
-1/4 C red wine vinegar
-2 tsp garlic, minced
-1 Tbsp dijon mustard
-1 tsp dried oregano
-1 tsp dried basil
-salt and pepper, to taste
Directions:
1. Cook pasta according to the package instructions for al dente pasta. Once cooked, drain and rinse in cold water to stop the cooking process.
2. Preheat your air fryer or oven to 425° F
3. Season chicken on all sides with salt, pepper, garlic powder and dijon mustard.
4. Air fry for 12-15 minutes or bake for 15-20 minutes.
5. In a small bowl whisk together all of the dressing ingredients until well incorporated.
6. Combine raw veggies and pasta in a large bowl and top with dressing.
7. Divide pasta and veggies between meal prep containers and top with sliced chicken.
